This week is going to be a busy one, so I've got some quick weeknight meals on the list this time.
Sunday: Mexican out for Cinco de Mayo!
Monday: Crockpot beef tips, mashed potatoes, broccoli
Tuesday: Sloppy Joes (Nicholas' favorite!)
Wednesday: Taco Salads
Thursday: Peppercorn Pork Loin, Corn, Asparagus
Saturday: Oven Baked Fajitas
Crockpot Beef Tips
1.5 pounds of sirloin roast cut into 1.5" cubes
1 package onion soup mix
1 package brown gravy
1 cup water
2 cans cream of mushroom soup
1 small can sliced mushrooms, drained
Place beef cubes in the bottom of crockpot, cover with dry soup mix and mushrooms. Mix gravy mix, soup, and water in a bowl and cover beef. Cook on low for 6-8 hours. I serve with mashed potatoes or rice and a veggie.
