1 pack taco seaso...Taco Nacho Rice<br />1 lb ground beef<br />1 pack taco seasoning<br />1 package Knorr Taco Rice<br />1 3/4 cup water<br />salsa<br />1 1/2 cup Mex Cheese<br /><br />Cook beef and seasoning until brown. Stir in rice and water, cover and heat on med for approx. 8 minutes. Remove from heat, fluff rice, drizzle salsa over mixture, and top with cheese. Cover for 5 min until cheese melts. Serve over tostitos. 2 boiled chicken breasts chopp...Chicken Enchiladas<br /><br />2 boiled chicken breasts chopped (or one canned chicken breast)<br />1 - 8 ounce cream cheese<br />1 can of rotel<br />6 flour tortillas<br /><br />on stove top melt cream cheese and rotel together, once creamy add chicken. Scoop into flour tortillas. Place in baking dish cover with shredded cheese and bake at 350 degrees for about 10 minutes, just long enough to melt the shredded cheese. Very good, and very simple. <br /><br />We also do taco salad on fast nights, or put something in the crock-pot all day while you are working. It is then ready to eat whenever you want it.<br /><br />Hope that helps some, now I will be checking back to steal some other peoples recipes.
